Tomato Rice

Ingredients :

Cooked Basmati Rice - 2 Cups
Roma Tomatoes (Chopped) - 2 Tomatoes
Onions (Chopped Lengthwise) - 1 big onion
Cinnamon stick - 1 inch
Bay leaves - 2
Red Chilli - 2
Coriander powder - 1/2 tbs
Red Chilli powder - Add only If like to have spicy(1/2 tbs)
Cashews (Slit) - 5
Cumin Seeds - 1/2 tbs
Garam masala - 1/4 tbs
Turmeric powder - 1/2 tbs
Ginger Garlic Paste - 1/2 tbs
Ghee or Butter - 4 tbs
Oil - 1 tbs
Salt - To taste
Cilantro leaves (Chopped) - To garnish

Preparation :

Cook Basmati rice grain wise and keep it aside to cool..
Now take a pan,add ghee/butter,oil,cumin seeds,cinnamon stick,bay leaves,red chillies and fry for sometime.Then,add onions and cook till they turn translucent,next add ginger garlic paste,turmeric powder,garam masala,coriander powder and mix well.Now add the tomatoes,salt,red chilli powder and cilantro leaves.cook this on low flame till the tomatoes are cooked.Now let it cool.
Add the cooked rice to this and mix well.
Tomato rice is ready to serve and enjoy..
