Bittergourd fry (Hagalkai/kakarkai fry)

Ingredients :

Bitter gourd (Finely Chopped) - 4 bittergourds
Onion (Finely Chopped) - 1 Onion
Mustard Seeds - 1/2 tbs
Cumin Seeds - 1/2 tbs
Tamarind paste - 2 tbs
Red Chilli powder - 1 tbs
Turmeric powder - 1/2 tbs
Garam Masala - 1/2 tbs
Ginger garlic paste - 1/4 tbs
Rasam powder - 1/4 tbs
Jaggery - small ball size or as needed
Salt - To Taste
Roasted peanut powder - 4 tbs
Cilantro leaves (Chopped) - To Garnish

Preparation :

Take a pan,add 2tbs oil,mustard seeds and let them pop.Then add cumin seeds,onions,ginger garlic paste and roast till the onions turn golden brown.Next add turmeric powder,chopped bitter gourd,red chilli powder,garam masala,rasam powder,salt and mix well.Now cover a lid and cook on low flame till the bitter gourd are tender.Then add the tamarind paste,jaggery and cook well.Add water if needed.When cooked add the peanut powder,cilantro leaves and cook for sometime on a low flame.When done bitter gourd fry is ready to serve.

Enjoy it with Roti and Chapati..
