Ingredients :
All purpose flour (Maida) - 1 cup
Course sooji - 1/2 cup
Rice flour - 3 tbs
Green chilli paste / red chilli powder - 1/2 tbs
Cumin seeds - 1/4 tbs
Sesame seeds - 1 tbs
Ajwain - 1/4 tbs
Salt - To taste
Cooking soda - A pinch
Ginger-garlic paste - 1/4 tbs
Onions (Finely Chopped) - 1 big size
Cilantro leaves (Chopped) - To garnish
Oil - For frying
Preparation :
1) Take a bowl and add all the above ingredients.
2) Now make a fine dough by adding water little by little.
3) Set this dough aside for 15-20 minutes.Then take a small ball size dough and pat it to medium thickness by applying oil.
4) Heat oil on a medium flame and dip the patted dough and fry till they turn golden brown.
Maddur Vada's are ready to serve when hot and crispy..You can serve this with coconut chutney.
