Green Chutney with fresh Mint

Ingredients :

Fresh Mint -1 cup
Cilantro leaves - 2 1/2 cup
Ginger - 1/4 inch
Green Chillies - 2
Roasted peanut powder - 1 1/2 tbs
Salt - To Taste
Cumin seeds - 1/4 tbs
Water - If needed to grind

Preparation :

Grind all the above ingredients to a fine paste.

Tomato Chutney

Ingredients :

Tomatoes - 10
Tamarind - 1/2 inch
Oil - 2 tbs
Jaggery  / Sugar - As needed
Salt - To taste
Coriander powder - 1/2 tbs
Red Chilli Powder - 2 tbs


For Seasoning :

Oil - 3 tbs
Mustard Seeds - 1 tbs
Cumin Seeds - 1 tbs
Asafoetida - 1/4 tbs
Turmeric powder - 1/2 tbs
Cilantro leaves - To Garnish

Preparation :

1) Wash the tomatoes and keep aside.

2) Now chop them and add to a pan..

3) Now cook them with 2 tbs oil on medium flame.After the tomatoes are smashed add dry tamarind,coriander powder and cook until all the water from the tomatoes is evaporated.This might approximately take 40mins.


4) Prepare the seasoning on the other side with oil,mustard seeds,cumin seeds,asafoetida,turmeric powder and cilantro leaves.

5) Mix the seasoning,red chilli powder,jaggery/sugar,salt to the cooked tomato paste and mix well.

Now cool this and when cooled enjoy it with chapathi,rice,dosa and idli..

Coconut Chutney

Ingredients :

Coconut pieces - 1/2 cup
Roasted Chana dal (Putana) - 5 tbs
Ginger - 1/2 inch
Green Chillies - 2
Lemon Juice - 1/4 tbs
Sugar - If needed
Salt - To Taste

For Seasoning :

Oil- 3 tbs
Mustard Seeds - 1/2 tbs
Cumin Seeds - 1/2 tbs
Cilantro leaves (Chopped) - To Garnish

Preparation :

Take a jar add coconut pieces,roasted chana dal,ginger,chillies,lemon juice,salt and grind it,then add water and make a fine paste.When done add the seasoning and mix it.


Coconut Chutney is ready to serve..Enjoy it with Dosa,Idli and Gundponglu..

Ridge Gourd Chutney (Heerekai Chutney)

Ingredients :

Ridge Gourd (Cut into pieces) - 1 Ridge gourd
Onions (Chopped) - 1/2 medium size
Tomato (Chopped) - 1 medium size
Green Chillies (Chopped) - 2 Chillies
Garlic Cloves (Chopped) - 1 clove
Peanuts - 5 tbs
Tamarind Paste - 1/4 tbs
Salt - To Taste
Sugar - 1/2 tbs

For Seasoning :

Mustard Seeds - 1/2 tbs
Cumin Seeds (Jeera) - 1/2 tbs
Turmeric powder - 1/4 tbs
Cilantro Leaves and Curry Leaves - To Garnish

 Preparation :

Take a pan add 2 tbs Oil,Chillies,Chopped Garlic,Onions and fry till the onions turn golden brown.Now add Cut Ridge Gourd,Tomatoes,peanuts and fry till the tomatoes are cooked and smashed.


When done cool it and grind it into a fine paste by adding Tamarind Paste,Salt and Sugar.Make sure not to add water while grinding.When grinded add the seasoning and mix well.

Ridge Gourd (Heerekai) Chutney is ready to serve.

Cabbage Chutney






Ingredients :

Cabbage(Chopped)-2 cups
Onions(Chopped)-1/2 cup
Tomato(Chopped)-1 tomato
Garlic(Cut)-2 cloves
Green chillies-3
Cumin seeds-1/2 tbs
Tamarind paste-1/4 tbs
Turmeric powder-1/2 tbs
Peanuts or roasted peanut powder-3 tbs
Sugar-1/2 tbs
Salt-To taste


For Seasoning :

Oil-4tbs
Mustard seeds-1 tbs
Cumin seeds-1 tbs
Chopped Cilantro and curry leaves-To garnish



Preparation :

Take a pan,Add Oil,chopped garlic,green chillies,chopped onions and fry till onions turn golden brown .Now,add chopped cabbage and fry on medium flame till all the water in the cabbage evaporates.Then,add tomatoes and fry till the tomatoes are cooked and cool it.

When it is cooled grind it by adding tamarind paste,sugar and salt.If you are using tamarind piece then add it while frying.Now Garnish the chutney with the seasoning.
You can refrigerate it and use till a week.
It serves good with Chapathi,Dosa and also rice.


Make Sure not to add water.

Peanut Chutney

Ingredients :

Roasted Peanuts-1/2 cup
Garlic cloves-1
Tamarind paste-1/4 tbs
Green chillies-2
Cumin seeds-1/4 tbs
Salt-As required
Sugar-If needed(Depends on one's taste)

Seasoning :

Oil-4 tbs
Mustard seeds-1/2 tbs
Cumin seeds-1/2 tbs
Cilantro and curry leaves(chopped)

Preparation :

Grind all the above mentioned ingredients with water into a fine paste like chutney.Later,add the seasoning and serve with Dosa or Idli.

Bell Pepper(Capsicum) Chutney

Ingredients :

Bell peppers(Chopped)-2
Onions(chopped)-1 cup
Tomatoes(Chopped)-1/2 cup
Garlic cloves(Chopped)-2
Cumin seeds-1/2 tbs
Green Chillies-3
Tamarind paste-1/4 tbs
Sugar-1/2 tbs
Salt-As required
Peanuts-3-4 tbs

For Seasoning :

Oil-4 tbs
Mustard seeds-1/2 tbs
Cumin seeds-1/2 tbs
Hing(Asafoetida)-A pinch
Cilantro leaves(Chopped)
Curry leaves(Chopped)

Preparation:

Take a pan,add 2 tbs of oil,cumin seeds,chopped garlic,Chillies,onions and fry them all till the onions turn golden brown.Later,add tomatoes,chopped capsicum and fry till they are cooked.Now add peanuts and fry for some more time,and when done keep it aside to cool.

When it is cooled grind it by adding tamarind paste,salt and sugar.Now add the seasoning and serve it.


**Note**  Make sure not to add water.
