Mint (Pudina) Rice

Ingredients :

Mint Leaves (Chopped) - Handful
Onions (Chopped ) - 1 medium size onion
Green Chillies (Chopped) - 2 Chillies
Ginger Garlic Paste - 1 tbs
Mixed Vegetables (Carrot,Beans,Peas,Corn,Broccoli ) - 1 cup
Cilantro Leaves (Chopped) - To Garnish
Cumin Seeds - 1/2 tbs
Salt - To Taste
Basmati Rice (Soaked for 1/2 hr) - 2 cups


 Preparation :

Take a vessel,add 2 tbs oil,cumin seeds,green chillies,mint leaves and fry for 5 minutes.Now add onions and fry till they are translucent,then add mixed vegetables,cilantro leaves and cook for sometime,when cooked add soaked rice,salt,water and mix well.Now cook it by closing the lid on medium flame till the rice is cooked.

Mint rice is ready to serve..
