Badnekai Bhajji( Stuffed Brinjal Pakora)

Ingredients :

Small size Brinjal-8
Roasted Chana dal powder (Putana powder) -4 table spoon
Peanut powder-5 table spoon
Red chilli powder-1 tea spoon
Cumin seeds-1/4 spoon
Lemon juice-8 drops
Sugar-a pinch
Hing(Asafoetida)-a pinch
Turmeric powder-a pinch
Sambar or rasam powder-1/4 tbs
Coriander(Dhania) powder-1/4 tbs
Garam Masala - 1/4 tbs
Ajwain - 1/4 tbs
Salt-As required
Chickpea flour(Besan) flour-1 1/2 cup
Sodium Bicarbonate-a pinch
Cilantro leaves (Chopped) - To Garnish
Oil-To fry

Preparation :

Paste Preparation(To Stuff):

Mix roasted Chana Dal powder,peanut powder,red chilli powder,cumin seeds,lemon juice,sugar,Asafoetida,sambar powder,coriander powder,garam masala,salt,turmeric powder and cilantro leaves.

Add little water and mix into a fine paste.

Pakora preparation:

1)Wash Brinjal and keep aside.

2) Slit them in the middle and wipe with a cloth so that its dry and can be fried.Now fry them on medium flame.

3) When the color changes take them out and cool.When it is cooled stuff the prepared paste and keep aside.

Take a bowl,add chickpea flour,salt,red chilli powder,sodium bicarbonate,Ajwain,water,cilantro leaves and prepare a fine batter.

Now dip the stuffed brinjal in the batter and fry till golden brown..

Brinjal Pakora is ready to serve when hot.Serve with Tomato ketchup and enjoy.
