Vegetable Bharta

Ingredients :

Brinjal - 6
Ridge Gourd - 1 medium size
Bottle Gourd (Lauki) - 1 medium size
Pumpkin - 1/4
Spring Onions - 1 Bunch
Methi Leaves - 1/2 Bunch
Cucumber - 2
Carrot - 1 Medium size
Raddish - 1/2 in medium size
Lettuce - 1/2 small size
Peas - 1/4 cup
Chilli Paste (Made with green chilli,ginger,garlic and salt) - 1/2 tbs
Tamarind Paste - 1/4 tbs
Sugar - 1/4 tbs
Roasted Peanut Powder - 5 tbs

I did not have pumpkin and lauki so just prepared with other vegetables.


Preparation :

First Boil Brinjal,Ridge Gourd,Lauki and pumpkin with little amount of water for 3 whistles..

Now cut and grate all the raw vegetables that can be added.

Now drain the water and smash the cooked vegetables.When smashed add these raw chopped vegetables,Salt,Green chilli paste,Tamarind paste,Sugar,Roasted peanut powder and mix well.

Vegetable Bharta is ready to serve.You can also add the seasoning of mustard seeds,Cumin seeds and cilantro leaves or yogurt(Curd).

It is a very good combination with Jowar roti..
