Ingredients for Puri :
Course Sooji - 2 Cups
All purpose flour (Maida) - 2 tbs
Salt - 1/4 tbs
Water - To prepare dough
Oil - For Frying puri
Mix all the above ingredients and prepare dough.
Cover this dough with a wet cloth and set aside for 10 minutes.
Now take a ball size of dough and roll it flat (neither too thick nor thin).
When rolled take a small size cup and press into circles.
Now take out these round shapes of dough slowly and keep aside.
Now heat the oil on medium flame and fry these circle shaped dough to make puri's and fry it they turn golden brown.
Now puri's are ready..
Ingredients for Pani :
Mint Leaves (Pudina) - 1/2 bunch
Cilantro Leaves -1/2 bunch
Dry Tamarind - 2 tbs
Cumin seeds - 1 tbs
Red Chilli Powder - 1/2 tbs
Black Salt - 1/4 tbs
Water - 5 cups
Preparation Of Pani :
Soak the dry tamarind in water for 15 minutes in hot water and smash it to form a liquid.
Grind Mint leaves,Cilantro leaves,Cumin seeds,Salt with little amount of water into a fine paste.Now mix this paste with water and add red chilli powder,black salt and mix well.
Now pani is ready..
For filling :
Soak Chana (Chole) overnight in water and boil it till it is cooked well in a pressure cooker for about 6 whistles.
When cooked smash it and add salt,garam masala,red chilli powder and mix.
Now pani puri is ready to serve..
You can add finely chopped onions to puri and serve..
